OBSERVATIONS & CORRECTIVE ACTIONS: Observed foods in grill make table stored above proper cold holding temperature of 41F degrees or below (see Temp Log). Person in charge adjusted thermomstat. On second measure, temperature was at 40F degrees. Observed foods in upstairs walk-in cooler stored above 41F degrees (see Temp Log). Unit was listed as in defrost. On second measure, ambient was at 51F degrees and foods temperatures elevated. At start of inspection, temperatures were in mid-40F's. Spoke with CEM Joe Williamson - he stated that foods had most likely been out of control for less than 4 hours based on initial temperatures and that facility can move all foods to functioning coolers. Person in charge had items moved.
