3-501.15	Cooling methods not in accordance with time and temperature criteria as specified in the Food Code Corrected On Site RECOMMENDED RESOLUTION: OBSERVATIONS & CORRECTIVE ACTIONS: Observed two pans of cooked chicken that was cooling down at room temperature and was below the temperature of 135F. Chicken was not being properly cooled to temperature in the alotted time. Per co-owner, chicken was cooked two hours prior. Chicken placed in oven for reheating.
