OBSERVATIONS & CORRECTIVE ACTIONS: Observed multiple pork butts, briskets, turkies and ribs cooling in blast walk in cooler. Per cooling logs, foods were placed in cooler at 12:00pm and temperatures read 135-139. At approximately 1:30pm, temperatures ranged from 112-125F. Foods were not being cooled to the proper temperature in the alotted time. Inspector stated foods need to be either discarded or rapidly reheated in ovens, not smokers. Foods removed for reheating in ovens.
