Observed standing water on floor behind water cooler, to right of large three vat sink. Observed standing water on floor behind left mixing machine in bakery room.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed bbq spare ribs on sandwich make station table that, per owner, were cooked approximately 45 minutes prior, were not being cooled to the proper temperature in the alotted time. Spare ribs removed for reheating. Observed a pan of spare ribs cooling on main line unused burner, that per owner, were just done cooking. Spare ribs were not placed in cooler at temperature of 135F. Temperatures show that spare ribs had not been out for an extended period of time. Spare ribs placed in cooler by owner.
