OBSERVATIONS & CORRECTIVE ACTIONS: Observed chicken on a stick to be hot holding below 135F degrees. Person in charge stated chicken made at 11am, under the 4 hour window. ***Spoke with person in charge to use a deeper pan, or use Time as Public Health Control for chicken on a stick. Moisture content is low, thus item unable to hold temperature. Person in charge stated food items do not go beyond 1 hr at the hot buffet lines.
