OBSERVATIONS & CORRECTIVE ACTIONS: Observed staff using bottom area of Giles warmer in deli with missing door to hot hold food for steamtable. -removed all food from warmer and placed in oven. Staff will not use until door is replaced and unit is holding at 135 degrees F consistantly.

OBSERVATIONS & CORRECTIVE ACTIONS: Observeed crab meat in produce walkin cooler for salad bar at 46.2 degrees F on metal rack. Moved to walkin cooler shelf were air flow is more consistant. Item was used on salad bar. Ambient air at 41 degrees F.
