OBSERVATIONS & CORRECTIVE ACTIONS: Observed numerous mice droppings on the shelf below the Prep Line Steam Table. Employee removed all of the items on the shelf and cleaned up the mice droppings. Observed numerous mice droppings on the shelves below the Prep Line Make Table Coolers. Employee removed all of the items on the shelves and cleaned up the mice droppings.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the concentration of the Quat Sanitizer coming out of the wall dispenser above the three compartment sink is at 100ppm and not at the correct concentration of 200-300ppm. Employees will hand make sanitizing buckets until the dispenser is properly calibrated.
