OBSERVATIONS & CORRECTIVE ACTIONS: Observed chlorinated dish machine in ware washing area had a concentration less than 50 ppm. Employee switched out bottles of sanitizer and primed machine to have a chlorinated concentration of 50-100 ppm by end of inspection. Observed chlorinated dish machine in front bar had a concentration less than 50 ppm. Manager made a service call and will utilize back dish machine until machine has been serviced.

Observed leak from condenser drains into catch pan outside of walk-in cooler. Manager was aware of issue. Observed leak underneath left basin of 2 compartment sink.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed grilled chicken and pasta in pantry reach-in cooler with an internal temperature of 50F. Ambient temperature of reach-in cooler was 37.8F. Employee stated they had pulled the food about an hour ago from walk-in cooler that had an ambient temperature of 38.2F. Manager discarded food items. Observed pasta on pantry make table with an internal temperature of 48.0F. All other food items on make table were within correct temperature range and ambient of make table was 38.5F. Pasta was discarded.
