OBSERVATIONS & CORRECTIVE ACTIONS: Observed cooked chicken (131°F) in storage cambro, not approved for permanent use in restaurant, to be outside of safe temperature range. **See Temperature Observations. Owner arrived on-site at time of inspection and stated that steak and chicken on the cook line are under time as a public health control. Manager on-site initially at time of inspection did not explain that chicken was under time control. Pan of chicken was not marked; manager stated that the dry erase magnet posted on ledge above the prep table serves as the marker for the chicken.
