OBSERVATIONS & CORRECTIVE ACTIONS: Observed chicken wings in fryer basket, that had not been fried, were well above temperatures of 41F. Per employee, wings had been in fryer basket for only 5 minutes. Temperatures suggest chicken wings had been there for an extended period of time. Wings discarded.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed chicken wings and beef soup in hot box were not keeping temperatures of 135F or higher. Foods removed for reheating. Observed a bin of pork skins and a bin of asada on shelf below hot box were not maintaining temperatures of 135F or higher. Foods removed for reheating by manager. Observed a pan of turkey tails on back kitchen meat grinder that had previously been fried, were not maintaining temperatures of 135F or higher. Turkey tails removed for reheating. Observed multiple tamales on front food service table that were not holding temperatures of 135F or higher, that per employee, were placed there at 10:00am. Time was at almost 4 hours. Tamales discarded.
