OBSERVATIONS & CORRECTIVE ACTIONS: Observed hams and turkies in walk in cooler and cooling logs that stated hams and turkies went straight to warmer from the pit. Temperatures of turkies were not holding at 41F or lower and no cooling monitoring records to indicate foods were being monitored as they were cooling.
