Observed clumps of flour in chicken dredge bin in back kitchen. Per manager, employees have not dredged any chicken today. Due to chicken residue has been in flour for over 4 hours, remaining flour discarded and bin removed for cleaning.

OBSERVATIONS & CORRECTIVE ACTIONS: Manager stated that she was keeping temperature logs for 3 door glass cooler and inspector observed that she was in fact keeping temperature logs. Inspector observed that temperatures taken as far back as 04/21 to 04/29 and showed various food products well above 41F and no corrective action was taken. Observed establishment is not keeping cooling logs for bbq meats cooling.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed multiple foods and ambient temperature in 3 door glass cooler were not maintaining temperatures of 41F or lower. All PHF's discarded and denatured. Maintenance out at time of inspection and repaired cooler. Observed raw eggs on kitchen prep table were not maintaining temperatures of 41F or lower. Per manager, eggs were just purchased and placed on table around 15 minutes prior. Temperatures suggest eggs had not been out for an extended period of time. Eggs removed to cooler by manager. Observed a pot of ox tails above 41F on drainboard that per employee, was taken from 3 door glass cooler minutes prior. Ox tails initially moved for rapid reheating for soup. After observing food temperatures in 3 door glass cooler were above 41F, ox tails removed from stove and discarded.
