OBSERVATIONS & CORRECTIVE ACTIONS: Observed raw meats stored above cooked meats and biscuits stored directly on top of raw chicken in the walk-in freezer.

RECOMMENDED RESOLUTION: Inspector recommends measuring temperatures when food products are placed in cases/salad bar and monitoring throughout the day. Different food containers for the deli case and/or arrangement of food containers for the deli case may also be necessary to maintain correct cold air distribution to all food product in the case.
OBSERVATIONS & CORRECTIVE ACTIONS: Observed several food items at the salad bar and deli case holding temperatures above 41 degrees. Person in charge removed items. Maintenance has been called to check on the salad bar and the deli will be looking into changing the type of food containers they use in the deli case for prepared food items as the large trays and pans are blocking proper cold air circulation within the case.
