CRITICAL Comply by : Jun 15, 2015 RECOMMENDED RESOLUTION: A) Food shall be protected from cross contamination by: (1) Separating raw animal foods during storage, preparation, holding, and display from: (a) Raw ready-to-eat food including other raw animal such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as vegetables, and (b) Cooked ready-to-eat food OBSERVATIONS & CORRECTIVE ACTIONS: Observed raw meats stored above cooked meats and biscuits stored directly on top of raw chicken in the walk-in freezer.
3-501.16	Cold Holding - Potentially hazardous cold food was not maintained at temperatures in accordance with the Food Code. CRITICAL Comply by : Jun 15, 2015 RECOMMENDED RESOLUTION: Inspector recommends measuring temperatures when food products are placed in cases/salad bar and monitoring throughout the day. Different food containers for the deli case and/or arrangement of food containers for the deli case may also be necessary to maintain correct cold air distribution to all food product in the case. OBSERVATIONS & CORRECTIVE ACTIONS: Observed several food items at the salad bar and deli case holding temperatures above 41 degrees. Person in charge removed items. Maintenance has been called to check on the salad bar and the deli will be looking into changing the type of food containers they use in the deli case for prepared food items as the large trays and pans are blocking proper cold air circulation within the case.
