OBSERVATIONS & CORRECTIVE ACTIONS: Observed sweet and sour chicken and orange chicken (7 containers), raw chicken, raw beef, egg rolls, brown rice in walkin cooler holding over 41 degrees F. -All discarded and denatured. Ambient at 45.1 degrees F. Checked 30 minutes later 40.5 degrees F from fans and 41. 7 degrees F ambient. Discussed defrosting times and cooling methods.
