4-702.11	Before Use After Cleaning - Utensils and food-contact surfaces of equipment are not sanitized before use after cleaning. CRITICAL Corrected On Site RECOMMENDED RESOLUTION: OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the concentration of the Quat Sanitizer coming out of the wall dispenser above the three compartment sink was at 100ppm and not at the correct concentration of 200-300ppm. The establishment has another wall dispenser by the mop sink which dispenses the same Quat Sanitizer and this unit is sanitizing at the correct concentration. Establishment will use this dispenser until the other one is calibrated.
