OBSERVATIONS & CORRECTIVE ACTIONS: Observed top layer of bean sprouts and cooked noodles in middle make table cooler with an internal temperature of 46F. Employee stated the items had been in walk-in cooler and brought up for lunch. At beginning of inspection, ambient temperature of middle make table cooler was 42F. Inspector had manager remove extra vegetables to allow for more air circulation and to also adjust thermometer. Ambient temperature by end of inspection was 40F.
