RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed beans that were cooked around 9:00am this morning, were stored in a large, deep bucket and then covered. Per employee, after being reheated, beans were divided into 5 chaffing pans, cooled to 135 at room temperature, placed on ice for cooling and then poured into container, covered and placed in walk in cooler. Based on time and temperatures, beans are within the proper temperatures for cooling. Beans re-divided into shallower containers for rapid cooling.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a pan of raw bacon stored directly on top of a pan of uncovered cooked beef in walk in cooler. Bacon restored by employee. Observed foods stored on fast rack in walk in cooler, below two pans filled with waste water dripping from condenser unit.

Containers were not immersed into ice to where ice was at food level of container. Temperatures suggest salsas had not been out for an extended period of time. More ice and water added.
