OBSERVATIONS & CORRECTIVE ACTIONS: Observed multiple meats in hot box that were not maintaining temperatures of 135F or higher. Per manager, meats were placed in hot box around 10:30am. It was almost 2:30am when observed. All meats observed out of temperature discarded.
