OBSERVATIONS & CORRECTIVE ACTIONS: Observed several employees that did not turn off the handles at the hand washing sink with paper towels after washing hands. Discussed with the employees and they washed hands and turned off the handles with a paper towel.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the concentration of some of the Quat Sanitizing buckets were at 100ppm and not at the correct concentration of 150-400ppm. Had the manager make a new bucket and we discovered that the concentration is coming out at the bare minimum and is not allowing them to get more use out of the bucket before the concentration drops below the required 150ppm. Manager made new buckets and they were tested to ensure that they were at the correct concentration.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a pan of food sitting in a pan of uncovered pickles in the one of the Make Table coolers. Discussed with the manager and he discarded the pickles. Observed some raw liquid eggs and raw cube steak being stored above ready to eat foods in one of the Make Table Coolers. Manager stored the liquid eggs and raw cube steak below the ready to eat foods. Observed employees cracking shelled eggs with gloves on and then proceeding to handle plates and other ready to eat foods. Discussed with the employees and informed them that they must remove gloves after handling raw foods and then wash hands and put on new gloves. Observed some raw calamari being stored above ready to eat foods in one of the True reach-in Coolers. Manager stored the raw calamari in another Cooler. Observed some raw frozen meat being stored on top of frozen uncovered cheesecake in the Walk-in Freezer downstairs. Discussed with the manager and he discarded the cheesecake. Observed ground beef being stored above whole beef in the True Reach-in Cooler by the Walk-in Freezer. Manager had employee store the raw ground beef below the raw whle beef.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed some grease build up on the sides of the French Top Grill. Observed some dried food build up in the creases on the top fo the French Top Grill. Observed some dried food build up on the back of the handles of some of the Make Table Coolers.

Observed a scoop used for butter being stored in a cup of standing still water in the serves area.

Observed a spray bottle of chemical being stored next to single service coffee cups in the cabinet in the room service storage area. Manager removed the chemical from the cabinet. Observed some chemicals being stored next to a box of hand towels on the storage rack in the basement by the dry storage room. Manager stored the chemicals away from the hand towels.
