OBSERVATIONS & CORRECTIVE ACTIONS: Observed 1 bucket of sanitizer (bucket of sanitizer on the main prep line) to test to zero quat sanitizer concentration. Person in charge re-made sanitizer which tested to 350ppm concentration.

Rice temped to 175 Fahrenheit. Observed cooked ground beef in the left steam table to have temperature of 117 degrees Fahrenheit. Person in charge re-heated ground beef in microwave to 165 degrees Fahrenheit.
