OBSERVATIONS & CORRECTIVE ACTIONS: Observed tamales on the counter in plastic bags that were tied shut. PIC stated they were cooling before placing in the cooler. Discussed taking the tamales out of the bag and cooling properly. Food was moved to an ice bath.
