OBSERVATIONS & CORRECTIVE ACTIONS: Fried chicken not holding at 135F or above in circle open-air display hot case. See temp log. Fried chicken was discarded. All other meats hot holding at acceptable temperature range. Employee stated internal temperature of chicken was verified by thermometer. Inspector discussed limiting time food items spend between fryer and hot holding case with employees.
