OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive dried food build up on the rolling cart that holds the steam well by the Pepsi Saute Cooler. Observed dried food build up in the door seals on the Make Table Cooler by the Pepsi Saute Cooler. Observed excessive build up on the metal storage shelves that hold some of the chemicals below the dishwashing area. Observed excessive dust and food build up in the low section of the Pepsi Saute Cooler where the grate has been removed. Observed excessive grease and food build up on the surfaces below the Flat Grill in the kitchen. Observed excessive grease build up on the left side of the Flat Grill. Observed excessive grease build up on the right side of the open flame grill. Observed excessive grease and food build up in the cabinets below the open flame grill. Observed excessive food build up in the catch tray below the open flame grill. Observed some dried food build up on the back of the handles of some of the Make Table Cooler and other equipment throughout the establishment. Observed some build up in the prep table drawer by the blowing fan in the back prep area.

Knives were removed from the sanitizer water.

Discussed with the manager that bacon cannot be left out all day unless the water activity is almost zero. Bacon was allowed to be kept because it was not left out for more than 4 hours. Bacon was placed in the steam well after being reheated.

Observed roach feces on the wall above the back 2 compartment sink. Observed some dead bugs in some of the light shields throughout the kitchen. Observed dead roaches on the table next to the washing machine downstairs. Observed a live roach on one of the storage shelves downstairs across from the washing machine and dryer. Observed that the walls behind the dishwasher are badly chipping and they have some black mold build up on them. Observed dried food build up on the walls throughout the dishwashing area. Observed that the ceiling surrounding the ceiling exhaust fan is in disrepair in the dishwashing area. Observed excessive dust build up surrounding the ceiling exhaust fan in the dishwashing area. Observed numerous holes in the walls throughout the upstairs and downstairs prep areas. Observed grease build up on the floors underneath the cooking equipment in the kitchen. Observed dripping water coming from the inside of the Pepsi Saute Cooler that was failing into an open container of grits. Discussed with the manager and he discarded the grits.
