OBSERVATIONS & CORRECTIVE ACTIONS: Observed beef and chicken in back prep area freezer was not holding temperatures of 41F or lower or frozen. Per employee, food was cooked around 2 hours prior and then placed in freezer 5 minutes ago. Per employee's explanation, food had been sitting out until around 70 or so degrees and then placed in freezer. Foods removed and reheated by employee.
