OBSERVATIONS & CORRECTIVE ACTIONS: Observed turkey in right side pit to be hot holding below 135F degrees. Item inside for less than 4 hours- removed and placed in large smoker for reheating. Observed sheet try of chicken to be hot holding below 135F degrees inside the hot box. Items inside hot box for under 30 min, removed and placed in large smoker for reheating.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed 3 tubs of beef brisket to be cold holding above 41F degrees inside the walk in cooler. Person in charge stated items in walk in cooler since 2am, overnight and had not been removed from walk in cooler. Items did not cool to 41F degrees with in the 6 hour cooling time frame- Person in charge discarded items.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed containers of potato salad, and cole slaw to be cold holding above 41F degrees inside the display reach in cooler. Person in charge stated items inside cooler for under the 4 hour window and placed items on ice. Person in charge state reach in cooler, right side door handle, broke during lunch today, which is causing a 1/2 inch gap. Maintenance to repair was called prior to inspection.
