PIC rearranged the product creating proper separation.
4-702.11	Before Use After Cleaning - Utensils and food-contact surfaces of equipment are not sanitized before use after cleaning. CRITICAL Corrected On Site RECOMMENDED RESOLUTION: OBSERVATIONS & CORRECTIVE ACTIONS: Observed the sanitizer behind the bar to be below the proper 200-400 ppm for quat sanitizer. PIC changed the solution.
4-703.11	Hot Water and Chemical - After being cleaned, equipment food-contact surfaces and utensils are not sanitized in accordance with the Food Code. CRITICAL Comply by : Oct 21, 2017 RECOMMENDED RESOLUTION: OBSERVATIONS & CORRECTIVE ACTIONS: Observed the upstairs dish machine to not be sanitizing at the proper level of 50-100 ppm for chlorine. There is another functional dish machine down stairs. PIC stated that the repair tech was there on Friday however the machine is still not sanitizing properly.
