OBSERVATIONS & CORRECTIVE ACTIONS: Observed sour cream and shredded cheese in make table that were above 41F. Employee advised that those were in make table for almost 4 hours. Employee discarded. Corrected on site. Observed cheese in the make table refrigerator above 41F. Employee advised that she removed it from the walk in cooler the day before. Item was discarded.
