OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive mold build up on the speaker in the Production Walk-in Cooler. Employees cleaned off the mold. Observed some mold build up on the wrapped lines in the Production Walk-in Cooler. Observed some build up on the low walls in the dishwashing area. Observed build up on the floors underneath the food equipment on the front prep line. Observed some build up on the floor underneath the large ice machine downstairs. Observed some build up on the floor underneath the equipment in the downstairs bar. Observed some build up on the floor underneath the equipment in the upstairs bar. Observed some dried food build up on the food bins underneath the table in the downstairs kitchen prep area. Observed some grease build up on the side of the Flat Grill.

Observed some raw chicken being stored behind raw shrimp in one of the Cold Drawers. Discussed with the manager and he had employees switch the meat around to avoid cross contamination.
