OBSERVATIONS & CORRECTIVE ACTIONS: Observed utensils washed in the sink but no sanitizer was set up in the 3 compartment sink. PIC but utensils in the clean dish area without proper sanitizing. PIC set up sanitizer and properly wash, rinsed and sanitized the utensils.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed knives and cutting utensils with food debris on the blade being stored in the clean dish area. Observed the strainer to have food debris on the inside of the bowl. PIC attempted to clean utensils. Further information in 14 4-703.11 violation

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the handle of the scoop for the sugar and the corn starch to have buildup.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a bowl of shrimp being stored over vegetables. PIC moved the shrimp. Observed multiple containers of food in the walk-in cooler without a proper cover. PIC put a cover on all product.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a bowl that was used for scrambling raw eggs when preparing a dish to not be wash rinsed and sanitized between future uses., the bowl had been rinsed with room temp water. PIC had the bowl washed properly.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed re-used bags being used to wrap crab ragoon in walk-in cooler. The bags were what the to-go boxes came in. They bags are not meant for food and can not be cleaned between uses. PIC removed bags and covered with food service plastic wrap.
