OBSERVATIONS & CORRECTIVE ACTIONS: Observed some rice in a bowl on the top of one of the rice warmers being held out of temperature. Manager discarded the rice. Food is listed in the temperature section and notated with a single *. Observed some egg drop soup sitting in a pan at room temperature on the front counter. Manager stated that they just let the soup sit out because they don't want to put it in a crock pot to maintain proper temperature. He stated that they just let it sit out and then reheat it on the wok cooking station. Manager discarded the soup. Foods is listed in the temperature section and notated with a single *.

Observed excessive dried build up on the tops of all of the deep freezers throughout the kitchen. Observed excessive dried build up on the red igloo on the floor by the three compartment sink. Observed excessive dried food build up on the rolling cart by the wok cooking station. Observed excessive build up on the top and bottom surfaces of the wok cooking station. Observed excessive build up on the front and sides of the True Reach-in Cooler. Observed excessive build up on the front door and handle on the Coke Reach-in Cooler. Observed water and old food in the bottom of the front deep freezer by the wok cooking station. Observed excessive dried food build up on the inner parts around the lids of the rice warmers. Observed excessive build up on the floors throughout the entire establishment, behind equipment and underneath it. Observed build up on the floor in the Walk-in Cooler that is being used as dry storage. Observed that the wall by the mop sink is cracked. Observed that the paint on the wall above the three compartment sink is chipping. Observed some build up on the floor in the restroom.

Observed excessive dried food build up on the rice warmer prep table. Manager started cleaning off the build up. Observed excessive dried food build up on the plastic food bins on the shelf above the three compartment sink. Manager started cleaning off the build up. Observed excessive build up on the back of the meat slicer. Manager started cleaning off the build up. Observed excessive build up on the scoop in the sugar food bin. Manager removed the scoop and had it cleaned. Observed old food build up on the rice scoops in the container by the unused steam table.
