Observed heavy food debris on the shelving in the sushi make table reach-in cooler (throughout entire unit). Observed buildup on the shelving inside the sushi prep cooler (near the rice warmer). Observed buildup on the shelving above both the three-compartment sink and the dish machine drainboards. Observed dust buildup on the fan guard at the top of the produce reach-in cooler.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed spicy salmon, crab, and spicy tuna in the sushi make table with internal temperatures above 41F. Manager stated the foods were put on the make table within 3 hours of inspection time and were removed to a functioning cooler.

Observed the shelving above the three-compartment sink and the drainboards of the dish machine to be rusting. Observed the shelving in the pepsi cooler and the produce cooler to be rusting and peeling paint.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the sushi make table and reach-in cooler unable to hold an ambient temperature of 41F or below for proper cold holding. ***Establishment is not to use the make table or reach-in cooler until repairs have been made.*** Observed water at the bottom of the sushi make table reach-in cooler. Observed two chest freezers with broken handles (near the beer cooler and microwave). Observed the lid of the chest freezer near the microwave to be in disrepair.
