All foods was removed from cooler and discarded. Observed water leaking from 2 door true cooler condenser unit. Observed right make table not holding foods to proper cold holding temperatures of 41F or below. PIC discarded all product held above proper cold holding temperatures and manually adjusted temperature of cooler to maintain proper temperatures. Observed water at bottom of both make table coolers. Observed gaskets in disrepair of both make table coolers.

PIC discarded product. Observed several foods cooling wrapped in plastic and in containers with lids. Foods were allowed to be properly cooled due to foods only cooling for 2 hours. PIC removed lids and plastic. Discussed proper cooling procedures with PIC. Cooling hand out provided.
