OBSERVATIONS & CORRECTIVE ACTIONS: Observed debris and sticky build up on the floor in the storage walk-in cooler. Observed some debris and build up on the floors by the unused reach-in cooler and hot water tank. Observed some debris on the floor behind the toilet. Observed dried spillage on the walls by the food bins by the electrical panels on the wall. Observed excessive food build up on the walls by the wok cooking station. Observed some food build up on the floor behind the wok cooking station. Observed excessive trash build up on the grounds surrounding the entire building and also in the grass.

Observed excessive grease and build up on the sheet tray underneath the broiler on the storage rack by the electrical panels on the wall. Observed excessive grease and food build up on the sheet tray holding the pot underneath the wok cooking station. Observed excessive food build up on the shelves of the cart by the three compartment sink. Observed dried food build up on the back of the handles of the True Reach-in Cooler. Observed excessive food build up on the wok cooking station around the burners. Observed excessive grease and food build up on the front and on the pipes of the wok cooking station. Discussed with the employee that all food contact must be cleaned once every four hours. Observed excessive dried food build up on the rice scoop and other utensils in the container on the front prep counter by the rice warmers. Manager cleaned the utensils. Observed excessive build up on the wok cooking bowl on the wok cooking station. Manager started cleaning the cooking bowl. Observed excessive build up on the meat cleavers on the wall above the three compartment sink. Manager started cleaning the meat cleavers. Observed excessive build up on the outsides of some of the food container on the shelf above the three compartment sink. Manager started cleaning the food containers. Observed excessive dried build up on the back prep table. Manager cleaned off the build up.
