OBSERVATIONS & CORRECTIVE ACTIONS: Observed some mold build up on the white plastic shield on the inside of the large ice machine. Employee covered the ice and cleaned off the mold build up. Observed dried food build up and grease on the fry baskets in the kitchen. Employee cleaned the fry baskets.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed some raw chicken being stored in the mop sink that was being held out of temperature. Employee stated that he placed the raw frozen chicken in the mop sink at about 8 am this morning. Discussed with the employee and since he could not tell me what time the chicken was above the required 411 degrees then the chicken was discarded. Food is listed in the temperature section and notated with a double *.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed raw chicken siting in the mop sink. Discussed with the employee and he stated that he doesn't use this sink as a mop sink. Upon further discussion he informed me that he discards the mop water outside. I informed him that he must discard dirty mop water in the mop sink and that no food or food related items should be stored in the mop sink.
