Observed bucco sauce on hot line reach in cooler was not maintaining temperatures of 41F or lower. Sauce discarded by manager.

Observed debris build up on main kitchen and down stairs kitchen food slicers. Both cleaned at time of inspection. Observed mold build up on catch plate and ice chute of small ice machine. Observed mold build up on ice arm of large ice machine.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed debris build up on bottom interior of plates storage hold, to left of cook line oven. Observed heavy debris build up on meat walk in cooler beer keg storage shelf and shelf is rusting and chipping.
