Observed grease and food build up on the walls behind the cooking equipment on the front prep line. Observed some build up on the low walls in the dishwashing area. Observed that the sprayer is coming loose from the wall and has holes around it in the dishwashing area. Observed some small holes in the walls in the dishwashing area. Observed some food build up on the floors underneath the Prep Table with the meat slicer on it. Observed some build up on the floors underneath the Coolers and Freezer in the Servers area. Observed some dried build up on the wall above the prep table with the meat slicer on it. Observed some build up on the floor where the brooms are stored. Observed build up on the walls in the mop sink area. Observed excessive mold build up on the lines of the Glycol Machine on the outside of the Keg Walk-in Cooler. Observed standing water on the floor to the right of the Small Bar Reach-in Cooler that is to the right of the four compartment sink. OBSERVATIONS & CORRECTIVE ACTIONS: Observed that he employee did not wash hands for at least 20 seconds. Discussed with the employee and he washed hands for at least 20 seconds. Observed the employee turn off the handles of the hand washing sink with his bare hands after washing his hands. Discussed with the employee and then he washed his hands and turned off the water with the paper towels.
