RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed fondu, chili, ground pork, beef and onions all reheating in steam wells. All foods removed for rapid reheating on stove top. Observed pork shoulder on prep table, that per cook, was taken out of the oven 5 minutes prior. Temperature suggest that pork shoulder had not been properly reheated to 165F. Pork placed in oven to be fully cooked.
