OBSERVATIONS & CORRECTIVE ACTIONS: Observed shrimp on the prep table without a cover and no active prep taking place. The food did not have any means of temperature control. The person in charge stated that the food would be prepared soon but had not yet occurred. The food was moved to the right reach-in cooler to cool down until prep is needed. Observed a container of pooled eggs at the wok line to have an internal temperature above 41F and sitting on top of ice in a bucket. The person in charge changed the eggs. Discussed proper ice bath set up with person in charge.
