Observed black buildup on the wall behind the hot water heater.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed employee prepare food and then clean the wok with a towel on the employee's waist and then wipe his hands on the towel. Employee then attempted to proceed to food preparation. Employee was stopped and instructed to wash his hands before proceeding.

Manager stated the food was cooked at 12pm and held on the make table. Food was replaced with foods from the walk-in cooler. Observed chicken on the make table with an internal temperature above 41F and on ice. The manager removed to the walk-in cooler. Observed shrimp on the prep counter with an internal temperature above 41F and no temperature control. Manager stated the shrimp was being peeled and moved to the walk-in cooler.

Observed noodles cooling on the three-compartment sink without temperature control. Manager removed to a counter and then to the walk-in cooler. Observed shrimp cooling in the left reach-in cooler with a tight plastic covering. Covering was pulled back to allow for heat transfer.
