RECOMMENDED RESOLUTION: potentially hazardous food that is cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 74°C (165°F) for 15 seconds. Reheating for hot holding shall be done rapidly and the time the food is between the temperature specified under ¶ 3-501.16 (B) and 74°C (165°F) may not exceed 2 hours.
OBSERVATIONS & CORRECTIVE ACTIONS: Observed alfredo sauce and marinara sauce to be reheating in a crockpot/pressure cooker and to be 80 degrees Fahrenheit. Manager stated that they had been reheating for almost two hours. Discussed with person in charge rapidly reheating in the microwave and only using crockpots/pressure cookers for hot holding. Refer to temperature log. Person in charge discarded marinara sauce. Alfredo sauce within time/temperature range.
