Cheese prepared the previous day with an inspection time temperature of 59 degrees Fahrenheit. Cheese discarded at time of inspection. Observed mashed potatoes to be held in the walk in cooler stored wrapped in plastic during cooling process (not allowing for hot air to escape and allow cold air into food). Mashed potatoes temped to 46 degrees Fahrenheit. Person in charge discarded. Observed boiled eggs stored in the large make table cooler to have temperature of 50 degrees Fahrenheit and not being cooled in walk in cooler. Person in charge moved food item to walk in cooler.
