OBSERVATIONS & CORRECTIVE ACTIONS: Observed ground beef stored on the bottom shelf of the omelet make table reach-in cooler and on the same shelf with ready-to-eat turkey sausage links and patties as well as ready-to-eat ham. Employee rearranged for proper separation. Observed raw turkey bacon stored directly on top of ready-to-eat cheese in the omelet make table reach-in cooler (also above the ground beef and other ready-to eat items on the bottom shelf). Employee removed and rearranged for proper separation. Observed pre-cooked shrimp stored with raw seafood and next to raw chicken in the bottom left grill drawer. Pre-cooked shrimp was moved to the top left grill drawer. Observed a raw pork chop stored with ready-to-eat cheese in the top left grill drawer. Pork chop was removed to the bottom left grill drawer away from ready-to-eat foods. Observed fully cooked chicken nuggets stored on the bottom shelf of the Traulsen upright reach-in freezer (right side for Market Grille) with uncooked steak fritters stored on a shelf above. Employee rearranged for proper storage. Observed raw crab legs stored on the same shelf with the uncooked steak fritters and also above the fullyl cooked chicken nuggets in the Traulsen upright reach-in cooler, on the right side for Market Grille.

OBSERVATIONS & CORRECTIVE ACTIONS: Market Grille Manager was unable to demonstrate to inspector knowledge of the requirements of the KCMO Food Code as he was unable to explain the significance of the relationship between maintaining the time and temperature of potentially hazardous food and the prevention of foodborne illness.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed pooled eggs sitting on the countertop with an internal temperature above 41F. Manager stated the eggs had been out since 5am with a temperature taken at 10am. Eggs were discarded. Observed shelled eggs sitting on a countertop with no temperature control. Manager stated the eggs had also been out since 5am and were discarded at time of inspection.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed pooled eggs and shelled eggs sitting out on the countertop without temperature control. Manager stated the eggs were being held by time but no time labels were affixed to the containers or available. Manager stated the eggs were put out at 5am and at the time of inspector's arrival at 10am, the eggs were still out and in-use for customer orders. All eggs were discarded and current customer orders were discarded and remade with fresh eggs from the walk-in cooler. Establishment must not use time as a public health control without written standard operating procedures to do so and records must be available for inspector to review.
