OBSERVATIONS & CORRECTIVE ACTIONS: Observed egg whites being stored in the bar cooler on the 2nd shelf of the bar cooler. PIC moved egg whites to the bottom shelf and discussed proper separation. Observed liquid eggs being stored on the top shelf of the small reach-in cooler that had ready to eat food on the bottom shelf. PIC moved eggs to the proper location in the walk-in. Observed a pan with food being stored under another pan with out a lid to protect in the walk-in. PIC place a lid on the food.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the paper receipt for the order to be stored on the top of the salad when the salad was finished and waiting to be expedited. PIC had the salad remade. Observed a bag of ice on to of the shrimp that was a grocery bag. PIC removed and replaced with a food grade bag.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed food utensils and equipment being stored next to dirty floor mats in the storage room. The mats were being stored in a rack in the middle of the room with the edges of the mats very close to utensil storage.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed small spoons stored in a container that does not allow the silverware to be facing the same direction to prevent bare hand contact on food contact surfaces. Observed the silverware on the wait station for rolling to be stored handle to food contact surface. Allowing for bare hands tot touch food contact surfaces. Observed the ice buckets to not be inverted in the front wait station.
