OBSERVATIONS & CORRECTIVE ACTIONS: Observed ground chorizo and ground hamburgers being stored above whole pork and steaks in the Walk-in Cooler. Manager stored the ground meat below the whole meats. Observed some raw chicken being stored behind a pan of steak in one of the Cold drawers on the line. Employee stored the raw chicken in front of the raw steak. Observed some raw ground beef being stored behind raw whole steak in one of the Cold Drawers on the line. Employee stored the raw ground beef in front of the whole steak.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed employee drinks being stored on the shelf above the coffee machine area in the servers station. Observed an employee drink without a lid being stored in the Prep Table Cooler on the front line. Manager discarded the drink.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the floor grout between some of the floor tiles throughout the kitchen is wearing down. Observed some debris and build up on the floor underneath the equipment behind the bar. Observed some build up on the wall behind the large dishwasher.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed some dried food build up on the knives on the knife holder on the wall above the back prep table. Manager removed the knives and had them cleaned. Observed several food pans with food build up on them on the clean dish rack by the three compartment sink. The dishes were removed and they were rewashed.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the ice bucket was being stored on top of the large ice machine. Observed a cup with no handle being stored in the flour food bin in the back prep area. Manager removed the cup from the food bin.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a few Quat Sanitizing buckets on the front prep line that were not at the correct concentration. Manager had employees make new buckets and they were checked to ensure that they were at the correct concentration of 150-400ppm. Observed that the Quat Sanitizing bucket at the bar was not at the correct concentration. Employee made a new bucket and it was checked to ensure that it was at the correct concentration of 150-400ppm.
