OBSERVATIONS & CORRECTIVE ACTIONS: Romano cheese on oven ledge not holding at proper temperature (see temp log). Person in charge stated cheese had been on ledge for less than four hours and returned cheese to make table.

OBSERVATIONS & CORRECTIVE ACTIONS: Employee sprinkled herbs on top of ready-to-eat appetizer with bare hand. Inspector asked employee to discard food, wash hands, and don gloves. Employee complied.
