Observed brisket in the right reach-in cooler in the dry storage area to have a date passed the 7 days allotted to hold food. PIC discarded. Observed gusado in the cold drawer that was dated on 2-22-18. Food was discarded.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed all the cooks line make tables and cold drawers to have buildup from previous days use. Observed buildup on the bottom shelf of both reach-in coolers in the dry storage area. Observed buildup and food debris in the gaskets of the reach-in coolers on the cooks line. Observed buildup in the top of the doors and on the door handles of the make table reach-in coolers on the cooks line. Observed buildup in the water reservoir in the steam well. Observed buildup in the hot holding cabinet on the cooks line.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed all of the sanitizers throughout the kitchen and bar to have a 0 ppm when tested for concentration. Upon investigation there was no sanitizer attached to the mixing station. PIC was able to make sanitizer at the proper concentration manually and corrected all of the sanitizer buckets.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a drink with a lid stored on the bread rack above bread and clean aprons instead of the designated drink area. The rack also had a sign on it stating no person items should be stored on the shelf. PIC had items moved.
