OBSERVATIONS & CORRECTIVE ACTIONS: Observed that all of the Quat Sanitizing buckets in the kitchen were at 100ppm and not at the correct concentration of 200-300ppm. Employees made new buckets and they were checked to ensure that they were at the correct concentration. Observed that there was no sanitizing bucket setup at the bar. Manager had a sanitizing bucket setup.

Observed that some of the door seals on the Main Make Table Cooler are in disrepair. Observed tape holding the door closed on the small smoker. Observed tape holding on the latch on the small hot box. Observed standing water in the bottom of the desert cooler. Employee wiped up the water.

Observed food tongs being stored on the stove handle in the kitchen. Employee removed the tongs from the stove handle.

Observed some food build up on the floor underneath the storage racks in the back Walk-in Cooler. Observed some dried food build up on the wals in various areas throughout the front and back of the establishment. Observed several holes in the walls throughout the establishment. Observed debris build up on the floors underneath some of the equipment in the back prep area. Observed some build up on the blue ledge leading to the back exit door. Observed some debris build up on the floor to the right of the right bar cooler at the bar.
