OBSERVATIONS & CORRECTIVE ACTIONS: Observed cooked chicken wings and fried fish in the non-commercial (white) fridge to have an internal temperature above 41F (see temp log). Employee could not tell inspector how long the food had been in the cooler. Food was discarded. Observed butter and cheese in the storage reach-in cooler with internal temperatures above 41F (see temp log). Manager did not know how long the items were in the cooler and were discarded.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the storage reach-in cooler and non-commercial fridge with ambient temperatures above 41F (see temp log). **Establishment is NOT permitted to use coolers for potentially hazardous items until repairs have been made.**

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed butane can on top of a bucket of salt near the reach-in freezer at time of reinspection. Butane was removed to chemical area. When inspector went back to the kitchen to get owner for the closing conference and again saw the butane canister on the prep table. The butane was finally removed from the area. Observed a bottle of Windex on the shelf with single-service items in the storage area. Manager had Windex removed to proper location.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Upon arrival, inspector observed chicken wings and chicken tenders on a speed rack near the fryers. Inspector questioned the manager who stated that the food was cooling. Manager stated the food is allowed to cool at room temperature until it reaches 70F and is then put in the coolers to finish cooling down. Person in charge could not demonstrate knowledge of the cooling procedures at reinspection.
