OBSERVATIONS & CORRECTIVE ACTIONS: Observed Spring rolls in a container that was set in an ice bath that doesn't fully envelop the container, and was unable to maintain a proper cold holding temperature of 41F or less
Items were prepared within the 4 hour period, and Person in charge placed the spring rolls in a smaller container to properly surround the container of ice
Observed a Display cooler at the front area that was reading an ambient temperature of 46.0F, above the required 41F for proper cold holding. No Food was being stored at the time of inspection, however establishment may not use the cooler for cold holding Potentially hazardous foods until the cooler is repaired.
