OBSERVATIONS & CORRECTIVE ACTIONS: Observed gyro meat in reach-in cooler with a date mark of 9/15. Person in charge stated meat was frozen on 9/15 and pulled a few days prior. Discussed proper date marking with person in charge. Observed two bins of cooked pasta in reach-in cooler to be missing date marks. Observed various items in salad low boy cooler to be missing date marks. Employees date marked all items appropriately.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed various items in make tables to be held above 41F. Employees placed all items out of temperature in coolers, as items had been out for under four hours. Observed cheese on countertop under no time or temperature control. Employee made ice bath for cheese. Discussed with person in charge the proper techniques for making an ice bath and about always keeping cheese cold and under temperature control.
